The Best Fluffy Mashed Cauliflower with a Mediterranean Twist

mashed cauliflower and fish up closeI love cauliflower! Once upon a post I fondly called cauliflower a Diva 🙂 mainly because its elegant and glorious looks. But really there’s another side to this diva that I discovered on the first time I was introduced to mashed cauliflower.

On the inside, cauliflower has a mild flavor that is welcoming other culinary influences and is willing to be transformed to almost any kind of dish. In this mashed form, this diva reveals her soft side 🙂 and actually makes a perfect candidate for a side dish that gets along with almost everything on the plate. This time I paired the mashed cauliflower with a great piece of halibut fish, but whatever your main dish is tonight, this side is a wonderful opportunity to incorporate fluffy, light and healthy flavors onto your plate.

You will need:

Cauliflower

2 tbsp. Butter

1 tsp. Olive Oil

2 Garlic cloves

¼ cup Greek Yogurt

½ tsp. Turmeric

½ tsp. Black Pepper

1 tsp. Salt

1 tsp. Lemon Zest

Let’s do this!

Super easy!

florets on cutting boardCut the florets out of the cauliflower and wash them well.

florets in pot and waterPlace in a pot with cold water and bring to a boil.

cauliflower florets boilingCook the cauliflower florets until they soften.

a peek at cauliflower boiling in a potIt takes about 15 minutes… You can check by poking the florets stem to verify it has softened.

drained cooked cauliflowerDrain cauliflower well removing EVERY drop of water. Keep them in the same pot.

chopping garlicChop garlic finely.

adding butter yogurt and garlicAdd butter, olive oil, Greek yogurt and the chopped garlic.

blending cauliflowerblending cauliflower using a stick blenderUsing a stick blender, blend all the ingredients together.

Let’s add the spices and continue with our Mediterranean Twist…

adding spicesblending spices into mashed cauliflowerAdd the spices and salt continue blending until the mash is unified and fluffy.

adding lemon zest to mashed cauliflowerAdd the zest to the cauliflower mash and mix together (at this point I use a spatula).

It is one of the BEST fluffy things we’ll ever try!

Quick Recipe:

Mashed Cauliflower with Mediterranean Twist-

Cut Cauliflower into florets.

Boil and cook until soften (takes about 15 minutes after water boils)

Drain well.

Add Butter, Olive Oil, Greek Yogurt and chopped Garlic.

Blend all together using a stick blender.

Add Turmeric, Black Pepper and Salt.

Continue blending with a stick blender until the mash is unified and fluffy.

Add Lemon Zest and mix it in.

Serve warm

      I used the zest of 1 lemon, it’s about 1 tsp. Always remember when you zest to grate only the color part of the skin, the white part tastes bitter… Enjoy!

    Sounds yummy! maybe I can even get my finicky man to try it if it has lemon and I don’t tell him it’s cauliflower 🙂
